Now, bananas are not my favorite. But I know how good they are for you, especially as a pre-workout snack. So I still always have them around but always accompany them with some peanut butter.
But! A good ol’ loaf of warm banana bread is always a win in my book. Can’t beat it!
This is a recipe I’ve made a few times and love to tweak it. As long as you keep the core ingredients the same you can go crazy with your add ins.
This time I used vegetable oil but you can do coconut oil which will add a lovely coconut flavor. Just make sure you don’t add the oil to the mixture when it’s solid.
I like to measure out the oil into an oven-safe container and pop it into the oven when you are preheating. This will melt the coconut oil to be easily added to your mixture. Otherwise you can use your microwave for a few seconds to melt the oil.
Adding different chopped nuts or dried fruit adds such a lovely texture to your bread. I added chopped walnuts, which always goes so well in banana bread I think. You could also add pecans, pistachios, apricots or raisins.
The big winner is of course adding chocolate! For this recipe I only had a couple of chocolate chips leftover in my pantry (I don’t know where they could have disappeared to *cough cough!), so I just sprinkled them over the top before I popped the unbaked bread into the oven.
If you want chocolate dispersed in the loaf then add about 3/4 of a cup of vegan semi-sweet chocolate chips after you’ve mixed the wet and dry ingredients together. The same time I added the walnuts in the recipe below.
My household gobbled up this banana bread up almost as soon as I’d finished taking all of my after photos. I only managed to have half a piece! So be ready to fight for your slice!
Vegan Banana Walnut Bread
Homemade vegan banana walnut bread. Comforting, warm, delicious and super easy! Add chocolate, nuts, or fruits to spice it up!
Ingredients
- 4 medium super ripe bananas
- 1/4 cup almond milk
- 1/4 cup vegetable oil
- 1/2 cup brown sugar
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp ground cinnamon
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 cup chopped walnuts
- Chocolate chips for toppings
Instructions
- Pre-heat oven to 350F. Grease a 9x5 loaf pan with nonstick spray or vegan margarine. Line pan with parchment paper.
- In a medium bowl, mash bananas with a potato masher or the back of a fork. Do not over mash.
- Add almond milk, vegetable oil, brown sugar, and vanilla extract to the mashed banana. Stir with a wooden spoon until combined.
- Then add flour, cinnamon, baking soda, and salt, and stir until just combined.
- Add chopped walnuts (or any other extra ingredients you choose) and stir until evenly dispersed in the mix.
- Pour in loaf pan and top with chocolate chips.
- Place into the oven let bake for 45 minutes. Add foil over the top and bake for an additional 10-15 minutes. It's fully cooked once you can stick a toothpick in the center of the bread and comes out clean.
- Allow to cool slightly before serving.
Notes
Oven temperatures may vary. Keep an eye on the bread towards the last 10-20 minutes of baking.
